After fermenting several batches of apple juice, I decided to ferment something different. I bought 2.5 gallons of Tree Top Apple Grape juice, 2.5 gallons of Juicy Juice Kiwi Strawberry juice, and Wyeast French Saison (3711) yeast. Below is an image of the juice and yeast I used.
I poured a small amount of each juice into two glasses and added half of the yeast to each. Then I poured the rest of each juice into a three gallon carboy. Finally I added the yeast from each glass to its respective carboy. The image below shows the apple grape juice on the left and the kiwi strawberry on the right.
The original gravity for the apple juice was 1.057 and for the kiwi strawberry was 1.052. I transferred each batch to a secondary container after 16 days. I kegged each batch after an additional eight days, for a total of 24 days. The final gravity for the apple grape juice was 1.006 and for the kiwi strawberry was 1.008. The final alcohol content for the apple grape was 6.7%; the kiwi strawberry was 5.8%.
Both of these drinks turned out alright. They were a bit dry for my taste, but most of my friends enjoyed them. In the future I would stop the fermentation early by placing the carboys in a fridge. I might also add some sugar to bump up the alcohol content since the residual sugar content will be higher.
